Freezing the shredded chicken is a great idea, btw... I should totally do that.
it's great, nuke 1 portion in about 50-55 secs, 2 portions in about 90. Put the wrap for the last 15 secs and it gets soft to fold easily. for pizza/nachos I just thaw it for about 35 secs and let the oven to the rest.
I'm totally going to do that.
Bet it would be good for fajitas, too...
anything that you can use shredded chicken for and it's quick to prep once cooked/frozen. the initial cooking, shredding, separate in portions and freezing takes a bit of time, but only do that every 2-3 weeks. I eat a lot of chicken.
